APPLE PUDDING CAKE
Use your favorite apples.
Recipe from Half Crown Hill Orchard

 1 1/3 cups sugar
 2/3 cup vegetable shortening
 2 eggs
 2 cups flour
 2 teaspoons baking soda
 2 teaspoons cinnamon
 1 teaspoon nutmeg
 6 cups apples, peeled and chopped
 1 cup chopped pecans or walnuts (optional)
 Sauce
 1 1/2 cups brown sugar, packed
 2 tablespoons flour
 1/4 cup butter
 1 teaspoon vanilla extract
 1 cup water


Preheat oven to 325. Grease and flour a 13 X 9 inch baking pan.

Cake: Beat granulated sugar and shortening with electric mixer until creamy. Beat in eggs, one at a time. In another bowl, sift together the flour, baking
soda, cinnamon and nutmeg. Gradually add to creamed mixture, beating well after each addition. Fold in apples and pecans by hand. ( Mixture will be
thick). Spread into pan; top with sauce.

Sauce: Stir brown sugar and flour in a medium saucepan. Stir in butter, vanilla and water. Bring to boil, stirring occasionally. Boil gently for 3 minutes,
stirring often. Immediately pour hot sauce over batter. Do not stir. Bake for 1 hour.
